Humble Roots

Serving more than 40,000 hot lunches to local kids in need, Humble Roots is a community pillar in Maple Ridge B.C.

Tyler Towe is the founder of Humble Roots Café & Deli in Maple Ridge, a regular pitstop for those visiting Golden Ears Provincial Park and a community staple. The kitchen turns out 200 to 500 meals a day, sources from local farms and suppliers, and still shows up for local schools with hot lunches during the week.

Join me as I spend a day in the cozy restaurant with Tyler and his crew, and keep reading to learn about what I saw, what surprised me, and what business owners can learn from how Humble Roots feeds its community.

Food Has a Story to Tell

The warm and welcoming atmosphere of Humble Roots hit me the moment I stepped inside the restaurant. The friendly staff kept things light as they laughed and joked around, and regulars would step in and greet Tyler by name. This felt like a second home for everyone here, and I was struck with the genuine sense of family that could only be developed naturally.

This warmth extends to their food with how much care they put into sourcing the freshest ingredients possible. Their farm-to-table concept focuses on finding the highest quality ingredients while travelling the least distance possible to get on your plate. This keeps the money in the community as they support their local suppliers and build direct lines of communication with their producers. Sometimes, the ingredients are grown as far as the front steps of the restaurant, where Tyler grows produce in a little garden bed. The end result? Food like your grandma made it. Food made with love.

Feeding Futures & School Food Programs

However, it’s not just the food that stands out at this café and deli. Humble Roots radiates warmth throughout their operations, and thanks to British Columbia’s Feeding Futures funding, schools like Eric Langton Elementary are able to partner with Humble Roots to create a Premium Lunch Program to extend their reach. This program has Tyler and his crew preparing hundreds of meals twice a week, every week to kids who need a little extra support. Annually, this is about 40,000 meals a year!

Tracy, who was helping deliver the food to Eric Langton Elementary, had this to say: “There’s a huge need really. Like food security is a big thing. Being able to love these kids up and feed them this food too, is like, a lot of these kids would never get a meal like this, right? So being able to love them like this is a gift, for sure.”

The story of how this community comes together truly touched me and you could see me about to tear up in the video.

All Successful Entrepreneurs Share This Trait

The biggest takeaway from this episode is that you got to love what you do. It’s been a constant theme among every successful entrepreneur we’ve interviewed, and it’s especially true in the restaurant industry where margins are low.

“It’s looking out and seeing people talk and they don’t know you’re watching. You see them smile and chew away.” – Curtis, Humble Roots

Ask Curtis, the right-hand man at Humble Roots, what he does and he’ll tell you he’s a chef in addition to being a weight lifter, plumber, psychologist, sheriff, electrician. It’s a demanding job, but he loves what he does and his passion is infectious.

This prompted me to reflect on my own “why” for running the Filmosity Show and business. It’s not about the money or fame. It’s about pursuing my genuine curiosity, learning about these businesses making an impact in my community and connecting with the incredible people behind them. Their stories motivate me on my journey in entrepreneurship and by sharing these experiences and lessons learned, I hope to do the same for others. This is the why that keeps me going and makes work feel like play.

Experimenting with a New Format

Just like how restaurants try out new recipes, we tried out a new approach to this interview. Our usual sit-down, podcast-like interviews (which honestly, can be a bit dry), wasn’t cutting it. Instead, we wanted to try and embrace a more immersive and interactive, storytelling approach by trying a more vlog-style format that would let us dive deeper into the day-to-day operations.

With Samson behind the camera capturing all the action, I put on an apron and worked alongside the Humble Roots team. This day-in-the-life-of experience was an immersive experience where I got to prep potatoes, buss tables, and learn how to operate their custom smoker. Quite frankly, this was our favourite video yet, because it was more fun to shoot and the end product is significantly more engaging. We’re excited to see if our audience feels the same way!

Keep Up with Our Journey

Whether you don’t have time to watch the full interview, or just want the TLDR version of the content, we’re launching a newsletter that will give you the best bits of what we had to learn from BC’s entrepreneurs. We have more exciting episodes on the way, if you enjoyed this glimpse behind the scenes then be sure to sign up for our newsletter for more! (P.S. Humble Roots:
00:00-00:01
Shed your fear of it.

Humble Roots:
00:01-00:03
You don’t cook at home do you?

Filmosity:
00:04-00:05
Today, I visited a restaurant.

Filmosity:
00:06-00:07
A humble restaurant, you could say.

Filmosity:
00:08-00:11
And I got to experience what it’s like to work a typical day here.

Humble Roots:
00:11-00:13
You wanna bust some tables for us?

Humble Roots:
00:13-00:13
Absolutely.

Filmosity:
00:14-00:19
From chopping potatoes, a little thick, busting tables, I feel confident.

Filmosity:
00:20-00:22
And even seeing unexpected problems arise.

Humble Roots:
00:23-00:24
You know what?

Humble Roots:
00:25-00:27
This is kind of a not good.

Filmosity:
00:27-00:30
My name is Andrew, and today, Today, we’re at Humble Roots.

Humble Roots:
00:35-00:37
Here is a storm, sure I get it.

Humble Roots:
00:37-00:38
On a day like this, I have no idea.

Humble Roots:
00:39-00:39
But we’re good.

Filmosity:
00:40-00:42
We’re not even filming, damn it.

Filmosity:
00:42-00:43
We missed the power went up.

Humble Roots:
00:43-00:44
That’s a day in the life type.

Humble Roots:
00:45-00:46
There we go.

Filmosity:
00:46-00:48
Let’s go into the back kitchen here.

Humble Roots:
00:53-00:54
All right, so mine’s almost set up.

Humble Roots:
00:55-00:57
So we’ll just make it look a little neat and tidy in here.

Filmosity:
00:57-00:59
You just start like an hour before prep?

Humble Roots:
00:59-01:04
Typically if we open at nine, start early, and prep is just something we gauge day to day.

Filmosity:
01:04-01:07
So what’s the mindset you have every day as you come in here to prep?

Filmosity:
01:08-01:10
You know, you said you’re preparing for the calm before the storm.

Filmosity:
01:10-01:11
Is it like, are you excited?

Filmosity:
01:12-01:12
Are you nervous?

Humble Roots:
01:13-01:13
You know what?

Humble Roots:
01:13-01:17
I’m always excited to come in and see how the day pans out.

Humble Roots:
01:17-01:22
It helps when you love what you do, you love the people you do it with, and you love the people you do it for.

Filmosity:
01:22-01:24
Customer comes in early, you gotta come in.

Filmosity:
01:24-01:25
You gotta do the work for them.

Filmosity:
01:25-01:26
Service industry.

Humble Roots:
01:27-01:28
And this is where I find out what we’re missing.

Humble Roots:
01:29-01:32
So the first order of the day is gonna be a little sloppier.

Humble Roots:
01:37-01:38
Okay, so I got that on.

Humble Roots:
01:39-01:42
So what we do is, they’re called coddled eggs.

Filmosity:
01:42-01:42
Okay.

Humble Roots:
01:45-01:51
So because we’re cooking this for 10 minutes before we open, my kitchen’s not as hot as I usually want it.

Filmosity:
01:51-01:51
Right.

Humble Roots:
01:52-01:54
Might affect my timing a little bit, but all good.

Filmosity:
01:55-01:56
You gotta be adaptable.

Humble Roots:
01:56-01:57
You gotta be adaptable.

Humble Roots:
01:57-01:58
Crisp those up.

Humble Roots:
01:58-02:01
I would like that flat top to be a little hotter, but…

Humble Roots:
02:07-02:08
Just wish this equipment was a little hotter.

Filmosity:
02:10-02:11
This is the first order of the day.

Humble Roots:
02:11-02:13
First order of the day.

Humble Roots:
02:13-02:14
And we’re doing it five minutes before we’re open.

Filmosity:
02:15-02:18
How many orders do you usually do on a given day?

Humble Roots:
02:18-02:20
Anywhere between, I’d say 150 to 200.

Humble Roots:
02:22-02:27
Meal program for the schools, add another 500 meals to that, and a catering could throw that off a bit too.

Humble Roots:
02:27-02:29
A weekend, probably 200, 250.

Humble Roots:
02:30-02:35
And that’s, you know, for here to go, online ordering, Skips, Ubers.

Humble Roots:
02:36-02:37
So yeah, keeps us busy.

Filmosity:
02:40-02:41
He’s cooking, he’s literally cooking.

Filmosity:
02:42-02:42
Literally cooking.

Humble Roots:
02:45-02:46
You know what?

Humble Roots:
02:47-02:48
He didn’t light my flat top.

Humble Roots:
02:48-02:49
This is kind of a…

Humble Roots:
02:51-02:52
Not good.

Filmosity:
02:53-02:53
Uh oh.

Humble Roots:
02:54-02:56
It’s okay. We’ll light it. It’s just going to delay.

Filmosity:
02:57-03:00
Take a while.

Humble Roots:
02:57-03:00
Yeah. Kai, this flat top’s all lit.

Humble Roots:
03:00-03:02
Oh yeah. Yeah.

Humble Roots:
03:03-03:04
Turn the gas off.

Humble Roots:
03:04-03:05
But you didn’t relight it? No.

Humble Roots:
03:07-03:10
When the gas went off, he relit everything but this.

Humble Roots:
03:11-03:14
And this takes about 30 minutes to heat. This is usually lit.

Humble Roots:
03:15-03:17
It’s usually lit by like eight or five.

Humble Roots:
03:19-03:21
Stupid power outage. Okay. One second.

Humble Roots:
03:22-03:24
Kai, I need you to get this going for me.

Humble Roots:
03:24-03:29
Please. I don’t know why it’s not lighting okay this is where you got to use your deductive reasoning.

Humble Roots:
03:29-03:58
How could i fix this problem?

Filmosity:
03:29-03:58
What are you gonna do instead now?

Humble Roots:
03:29-03:58
We’re gonna fire in the oven and we’re gonna use pans.

Humble Roots:
03:29-03:58
I was wondering why this food wasn’t cooking the way I wanted it to.

Humble Roots:
03:29-03:58
Pan fry that. This is just one of those things in a restaurant where people want their food within a certain time frame, you just got to figure it out.

Humble Roots:
03:29-03:58
So chefs, what I’ve learned, because i now identify as a chef, thank them so much, are some of the most creative and like resourceful and like amazing at solving problems and being able to think on their feet.

Humble Roots:
03:58-04:00
And I think part of that is just necessity.

Humble Roots:
04:01-04:06
When you’re doing something that’s so high tempo, you just naturally create solutions

Humble Roots:
04:06-04:07
On the fly.

Filmosity:
04:07-04:08
Just like that?

Filmosity:
04:08-04:09
Just like what you did now?

Humble Roots:
04:09-04:10
Just like that.

Filmosity:
04:10-04:10
Okay.

Humble Roots:
04:11-04:12
Curtis.

Humble Roots:
04:12-04:13
What’s up, yo?

Humble Roots:
04:13-04:14
You’re Curtis?

Humble Roots:
04:14-04:16
Never have a 12 year old daughter.

Humble Roots:
04:16-04:17
Ever.

Humble Roots:
04:17-04:17
Or two.

Humble Roots:
04:18-04:20
Did you forget to turn the flat top on?

Humble Roots:
04:20-04:23
No, it was turned on but the power went out.

Humble Roots:
04:23-04:24
How did the power go out?

Humble Roots:
04:25-04:26
Welcome to the ALR.

Filmosity:
04:27-04:27
You’re Curtis, right?

Humble Roots:
04:27-04:28
Yeah, what’s your name?

Filmosity:
04:28-04:29
Andrew.

Filmosity:
04:29-04:30
This is Samson behind the camera.

Humble Roots:
04:30-04:31
Hey, nice to meet you.

Filmosity:
04:31-04:31
Nice to meet you.

Humble Roots:
04:32-04:33
We’re going to start to do some smoking today.

Filmosity:
04:33-04:34
Okay.

Filmosity:
04:34-04:34
Okay.

Filmosity:
04:35-04:36
Oh, right.

Humble Roots:
04:36-04:38
This is the big dog right here.

Filmosity:
04:38-04:39
What actually is this?

Filmosity:
04:39-04:43
Upon first look, I thought it looked like an outhouse for a second.

Humble Roots:
04:43-04:43
It is.

Filmosity:
04:43-04:44
It is an outhouse.

Humble Roots:
04:45-04:47
No, it’s a custom-made smoker.

Humble Roots:
04:47-04:54
It’s been here since before my time. So basically we do a lot of our smoking here, our house turkey, all that kind of stuff is all done here.

Humble Roots:
04:55-05:02
Yeah. So basically, when we’re real busy, I’ll put like all the meat up here and then open the door and away it goes.

Filmosity:
05:03-05:08
Okay

Humble Roots:
05:03-05:08
And then you just don’t want to breathe in.

Filmosity:
05:03-05:08
Oh, wow.

Humble Roots:
05:03-05:08
Right?

Humble Roots:
05:10-06:41
And then just the smoke keeps going up and so I’m gonna lay all the pork shoulders up in there.

Filmosity:
05:10-06:41
Yeah,

Humble Roots:
05:10-06:41
And then

Filmosity:
05:10-06:41
That’s cool. I’ve never seen that before.

Humble Roots:
05:10-06:41
No, you know what neither did I. It’s basically like an offset smoker. You’ll see them in all like the shows and stuff right out there side by each, but this one’s custom-built.

Filmosity:
05:10-06:41
Cool

Humble Roots:
05:10-06:41
But yeah, we had a big day today. We got the meal program I don’t know if you told you about the meal program.

Filmosity:
05:10-06:41
No, we’ve just been shooting them up there.

Humble Roots:
05:10-06:41
So we feed 481 kids twice a week here in Maple Ridge.

Humble Roots:
05:10-06:41
So all that food comes from this kitchen. So I’ll just show you kind of how we get started order just came in now.

Humble Roots:
05:10-06:41
So this rack is going for all the kids and it’s not my pork underneath it.

Humble Roots:
05:10-06:41
So this is the pork shoulder we’re gonna smoke and then we have brisket. That’s going to go in tomorrow.

Filmosity:
05:10-06:41
Yeah.

Humble Roots:
05:10-06:41
So we put that outside as well. That’s veggies for a hundred kids Veggies from 45 kids all the hot food.

Filmosity:
05:10-06:41
So you guys take care of the lunches for every every week.

Humble Roots:
05:10-06:41
Every week, twice a week, on Wednesday and Friday

Filmosity:
05:10-06:41
Wednesday and Friday.

Humble Roots:
05:10-06:41
Yeah, we feed 481 kids in Maple Ridge, Pitt Meadows and –

Filmosity:
05:10-06:41
That’s huge. Amazing.

Humble Roots:
05:10-06:41
You know it’s funny when I don’t know if you guys remember when Facebook came out.

Filmosity:
05:10-06:41
Yes

Humble Roots:
05:10-06:41
Okay.

Filmosity:
05:10-06:41
Yeah, we were alive.

Humble Roots:
06:41-06:41
You were alive?

Humble Roots:
05:10-06:41
It says, you know, what your job is, right?

Humble Roots:
06:41-06:43
So I put chef

Humble Roots:
06:43-06:52
And then in brackets, I was like weight lifter, plumber, psychologist, sheriff, electrician, because that’s what we have to do as chefs.

Humble Roots:
06:52-06:53
There’s so many things.

Filmosity:
06:53-06:55
I don’t think people notice that.

Filmosity:
06:55-06:57
Well, the chef, you just cook food.

Humble Roots:
06:57-07:01
No, there’s no the profit margin in the restaurant business is not the greatest.

Filmosity:
07:01-07:02
Right.

Humble Roots:
07:02-07:08
You know, anyone who owns a Microsoft or something that will tell you the last thing they would want to be to make money is be a chef.

Humble Roots:
07:08-07:10
But you gotta love it. This is the biggest thing.

Filmosity:
07:10-07:11
And that’s why you do this.

Humble Roots:
07:12-07:13
Yeah, it is.

Filmosity:
07:14-07:16
What about cooking and serving people food?

Filmosity:
07:16-07:19
Like what was that that ignites your passion?

Humble Roots:
07:20-07:20
It’s the smiles.

Humble Roots:
07:23-07:25
It’s looking out and seeing people talk and they don’t know you’re watching.

Humble Roots:
07:26-07:27
You see them smile and chew away.

Humble Roots:
07:28-07:33
You know, it’s a special thing to realize that what you have made goes in someone’s body.

Humble Roots:
07:34-07:35
Like it’s super deep.

Humble Roots:
07:36-07:37
Yeah, it is deep, right?

Humble Roots:
07:38-07:41
Um, why I do it, I don’t know. I love it now. I’m kind of stuck.

Filmosity:
07:44-07:46
It’s only been 20 minutes since opening.

Filmosity:
07:49-07:53
There’s just so much going on. Respect to these restaurant owners.

Humble Roots:
07:56-07:58
This is why Curtis is so jacked.

Humble Roots:
07:58-08:00
You know, I was broken for the first year.

Humble Roots:
08:01-08:05
So when I get home, my wife makes me take a four hour shower.

Humble Roots:
08:07-08:08
Because I smell all smoky.

Humble Roots:
08:09-08:09
All smoky. Yeah.

Filmosity:
08:09-08:10
Yeah.

Humble Roots:
08:10-08:14
So this is going to go in for about probably two hours.

Humble Roots:
08:16-08:18
We put the fat side up.

Humble Roots:
08:19-08:24
So as you’re cooking it, that kind of melts through the meat.

Filmosity:
08:19-08:24
Yeah.

Humble Roots:
08:25-08:27
And then we’ll take it inside and finish it in the oven.

Humble Roots:
08:28-08:30
Just because there’s a lot more control.

Filmosity:
08:28-08:30
Right.

Humble Roots:
08:31-08:32
Yeah.

Filmosity:
08:32-08:33
Wow.

Humble Roots:
08:32-08:33
So there she goes.

Filmosity:
08:38-08:40
How are you guys today?

Humble Roots:
08:40-08:40
This is Jen.

Filmosity:
08:41-08:42
What are we doing right now, Jen?

Humble Roots:
08:42-08:44
About to go take and order at a table.

Humble Roots:
08:44-08:48
Just going to make some drinks for them and then I’m going to pop outside and take some desserts out to a customer.

Humble Roots:
08:49-08:49
Okay, cool.

Humble Roots:
08:50-08:51
Steam a latte?

Humble Roots:
08:52-08:53
We call her Big Red.

Humble Roots:
08:56-08:57
Do a little art.

Humble Roots:
09:07-09:09
Of course it’s a staff cup and I get to like a boss.

Humble Roots:
09:10-09:11
He’s the boss but I’m like a boss.

Humble Roots:
09:12-09:14
Okay order up.

Humble Roots:
09:15-09:15
Lou.

Humble Roots:
09:17-09:21
You are my son I am your father.

Humble Roots:
09:22-09:23
Let’s cut some spuds.

Humble Roots:
09:23-09:25
You guys saw Central Command here?

Humble Roots:
09:25-09:26
The war room.

Filmosity:
09:26-09:28
This is central command?

Humble Roots:
09:28-09:31
That’s central command right there. We redo it every day.

Humble Roots:
09:32-09:35
On the right hand side we have one thing to get ordered.

Humble Roots:
09:36-09:37
And I try and remember to do it.

Humble Roots:
09:38-09:40
But sometimes Rita has to remind me.

Humble Roots:
09:41-09:47
So I go with this list to the fridge and then I get what we need for the day.

Humble Roots:
09:47-09:52
And I write it down over there so I need to see what I have to do for the day.

Filmosity:
09:53-09:56
So you control the central command. You tell everyone what to do.

Humble Roots:
09:56-09:57
She’s the boss.

Filmosity:
09:57-09:58
She’s the boss, you too.

Humble Roots:
09:58-10:00
No, I’m making the list and I’m making whatever.

Humble Roots:
10:00-10:02
She’s the mama and I’m the papa.

Humble Roots:
10:04-10:05
We’ll give this to Uncle Tyler.

Filmosity:
10:06-10:06
Uncle Tyler.

Humble Roots:
10:07-10:07
Uncle Tyler.

Humble Roots:
10:12-10:13
Here you go Tyler

Humble Roots:
10:13-10:16
Okay, so my flat top is still not where I want it.

Humble Roots:
10:17-10:19
An hour in, I can’t explain it.

Humble Roots:
10:19-10:22
Stupid power outage, but it’s all good.

Filmosity:
10:22-10:24
Tyler, do you have an extra apron for me?

Filmosity:
10:24-10:25
I feel out of place.

Humble Roots:
10:25-10:26
We do, yeah.

Humble Roots:
10:26-10:27
You want one?

Filmosity:
10:27-10:28
I would like one.

Humble Roots:
10:32-10:32
Thank you, Kyle.

Humble Roots:
10:33-10:34
Oh, you’re gonna be an assistant?

Filmosity:
10:34-10:36
I got the, yes, give me the assistant.

Filmosity:
10:36-10:37
I’ll do whatever you guys need me to do.

Filmosity:
10:37-10:38
Thanks, Kai.

Filmosity:
10:38-10:39
Thanks, Kai.

Filmosity:
10:39-10:40
Let’s do this.

Filmosity:
10:41-10:41
I don’t know what I’m doing.

Filmosity:
10:42-10:46
He’s officially– – I’m a professional distraction.

Filmosity:
10:47-10:48
I’m in people’s way all the time.

Filmosity:
10:48-10:50
We are in their way.

Filmosity:
10:50-10:52
That should be the format, in your way.

Filmosity:
10:55-10:57
I’m part of the family now.

Humble Roots:
10:57-10:57
Oh yay!

Humble Roots:
10:58-10:59
You’re part of the family.

Filmosity:
10:59-11:01
I don’t know, I’ll do whatever.

Filmosity:
11:02-11:04
Yeah, get him to chop for you.

Filmosity:
11:04-11:06
I’ve never worked in a restaurant before.

Humble Roots:
11:07-11:08
Do we need to worry about you?

Filmosity:
11:10-11:11
I’ve never had a real job.

Filmosity:
11:11-11:12
This is all I do.

Humble Roots:
11:12-11:12
Look at this.

Filmosity:
11:14-11:14
Oh shoot.

Filmosity:
11:15-11:16
We didn’t get our breakfast yet.

Filmosity:
11:17-11:19
Okay, go place that order first.

Filmosity:
11:23-11:24
Does it look like I work here?

Filmosity:
11:25-11:25
Yeah.

Filmosity:
11:26-11:27
You gonna take my order or what?

Filmosity:
11:28-11:30
How was your experience today?

Filmosity:
11:31-11:31
Hey Sky.

Humble Roots:
11:32-11:32
Hey.

Filmosity:
11:32-11:32
Andrew.

Humble Roots:
11:33-11:34
Nice to meet you.

Filmosity:
11:34-11:34
Nice to meet you.

Filmosity:
11:35-11:36
This is Samson behind the camera.

Humble Roots:
11:37-11:37
Hi.

Filmosity:
11:38-11:38
Hey.

Humble Roots:
11:38-11:40
Okay, what can I get for you guys today?

Filmosity:
11:40-11:41
A professional small talker.

Humble Roots:
11:41-11:42
I’m a big talker.

Filmosity:
11:43-11:44
Yeah, no, that’s good.

Filmosity:
11:44-11:45
Perfect.

Filmosity:
11:45-11:49
I think Samson wanted the classic breakfast.

Humble Roots:
11:49-11:51
Do a traditional classic?

Filmosity:
11:51-11:53
Me, Curtis recommended the morning pro.

Humble Roots:
11:53-11:55
Oh, lovely, one of my favorites.

Filmosity:
11:55-11:56
Okay, well.

Humble Roots:
11:56-11:58
I’m a traditional girl too, but I eat that every day.

Filmosity:
11:58-11:59
Yeah.

Humble Roots:
12:01-12:02
A lot of chefs hear this in their sleep.

Humble Roots:
12:07-12:08
That’s your order, hey.

Filmosity:
12:08-12:08
Yeah.

Humble Roots:
12:11-12:16
I cook this a little bit, then I put raw broccoli in it and all the other veggies.

Filmosity:
12:16-12:17
Do you need some muscles?

Humble Roots:
12:17-12:17
What was that?

Humble Roots:
12:18-12:18
Do you need some muscle?

Humble Roots:
12:19-12:19
Where?

Filmosity:
12:22-12:23
Me? Look at him.

Humble Roots:
12:36-12:39
So that’s about half the vegetables.

Filmosity:
12:40-12:41
There’s another one coming.

Humble Roots:
12:43-12:44
I’ll put them all in raw.

Humble Roots:
12:46-12:48
And the peas are frozen and it helps cool it down quickly.

Humble Roots:
12:48-12:50
So it’s obviously food safe.

Filmosity:
12:50-12:50
Yeah.

Filmosity:
12:51-12:54
Do you want to help Sharida with potatoes?

Humble Roots:
12:54-12:56
Yeah, what would you like to do?

Filmosity:
12:56-12:58
I don’t know, the easiest task.

Humble Roots:
12:59-13:01
You want to try to cut some hash?

Filmosity:
13:02-13:02
Sure.

Humble Roots:
13:02-13:05
So you’re going to get your potato, you’re going to cut it in half.

Filmosity:
13:05-13:06
Okay.

Humble Roots:
13:07-13:09
And then this one is half again.

Filmosity:
13:09-13:09
Okay.

Humble Roots:
13:10-13:11
And then you’re going to cut it.

Filmosity:
13:12-13:12
Okay.

Humble Roots:
13:13-13:15
You don’t have to be quick.

Filmosity:
13:15-13:19
Just make sure the consistency is good.

Humble Roots:
13:19-13:21
like no bigger than this one.

Filmosity:
13:21-13:22
All right, let’s see how I do.

Humble Roots:
13:22-13:23
Let’s do it.

Filmosity:
13:24-13:25
I got small hands.

Humble Roots:
13:26-13:27
Yes, put them on.

Filmosity:
13:28-13:31
This is how fast Rita is.

Humble Roots:
13:31-13:34
Yeah, but Rita’s doing every day, right?

Humble Roots:
13:35-13:36
You gotta just practice.

Humble Roots:
13:44-13:46
All right, one up.

Filmosity:
13:52-13:53
A little thick.

Filmosity:
13:53-13:55
How do you cut so fast, Rita?

Humble Roots:
13:55-13:56
I yell at her all the time.

Humble Roots:
13:56-13:57
Yeah!

Humble Roots:
13:57-13:58
Faster!

Humble Roots:
13:58-13:58
Faster!

Humble Roots:
13:59-13:59
Come on!

Humble Roots:
13:59-14:00
Go, go, go!

Humble Roots:
14:00-14:02
You don’t have time to lose!

Humble Roots:
14:03-14:03
Come on!

Humble Roots:
14:05-14:06
No, just kidding.

Humble Roots:
14:06-14:06
Practice.

Filmosity:
14:07-14:10
When new hires come in, they’re obviously not as fast as well.

Humble Roots:
14:10-14:10
You know what?

Humble Roots:
14:11-14:12
The speed will come.

Filmosity:
14:13-14:13
Right.

Humble Roots:
14:14-14:20
Just practice what you do, make sure it’s a good size and then your speed will come.

Filmosity:
14:31-14:32
Kai, what do you think of Andrew’s uh…

Filmosity:
14:33-14:33
Cutting?

Humble Roots:
14:34-14:39
Well, I mean I’m not a master but I think it looks pretty clean over here.

Filmosity:
14:39-14:40
You’re nice.

Humble Roots:
14:40-14:42
Hey, we gotta check the pork guys then you can go eat.

Filmosity:
14:42-14:43
I know how to cut potatoes.

Humble Roots:
14:47-14:53
I’m just gonna roll it over a bit and then we’ll shut it for about another 45 minutes or so and then it’s gonna go straight in the oven after.

Humble Roots:
14:53-14:58
Could cook this in here all day but stuff it saves stuff like that so I gotta make sure I get it in the oven.

Humble Roots:
14:58-14:59
I was just here to be your spotter.

Filmosity:
14:59-15:00
Oh thank you.

Humble Roots:
15:00-15:01
Just sketching my brain out there.

Humble Roots:
15:02-15:03
I’ve got some lunch ready for you guys.

Filmosity:
15:03-15:04
Oh.

Humble Roots:
15:04-15:05
Come on out.

Filmosity:
15:09-15:10
How’s it look?

Filmosity:
15:10-15:11
It looks very good.

Filmosity:
15:11-15:11
I like this vibe.

Filmosity:
15:12-15:13
Homey.

Filmosity:
15:14-15:16
The workers feel like it’s a family.

Filmosity:
15:16-15:19
Customers are probably, you know, regulars.

Filmosity:
15:19-15:20
All right, dig in.

Filmosity:
15:21-15:22
Oh my gosh.

Filmosity:
15:39-15:40
That is so good.

Filmosity:
15:40-15:41
That’s actually really good.

Filmosity:
15:41-15:43
That is really good.

Filmosity:
15:43-16:10
like mmmm.

Filmosity:
15:43-16:10
I have no words.

Filmosity:
15:43-16:10
Hi, Andrew.

Tracy:
15:43-16:10
Tracy, nice to meet you.

Filmosity:
15:43-16:10
Hi, Samson

Tracy:
15:43-16:10
Hi, hello.

Humble Roots:
15:43-16:10
So Tracy does the work for

Tracy:
15:43-16:10
Eric Langton, yeah.

Filmosity:
15:43-16:10
Okay, so just coming to pick up their lunches?

Tracy:
16:10-16:15
Lunches to feed the kids up the road at the school there.

Tracy:
16:15-16:16
Yeah, lots of kids.

Filmosity:
16:17-16:19
Premium lunch program, Humble Roots.

Tracy:
16:19-16:20
Yeah.

Humble Roots:
16:20-16:21
And then this goes out to a car.

Filmosity:
16:23-16:23
The muscle.

Humble Roots:
16:24-16:24
Yeah.

Filmosity:
16:24-16:25
I don’t got that.

Filmosity:
16:29-16:33
Is this like a program that is signed up with Humble Roots?

Tracy:
16:33-16:35
Yeah, so there is like provincial funds.

Tracy:
16:35-16:36
It’s called Feeding Future Students.

Filmosity:
16:36-16:37
Got it.

Tracy:
16:37-17:10
Yeah that budget helps feed kids that are vulnerable and need the help.

Humble Roots:
16:37-17:10
And it’s about 40 000 meals a year.

Filmosity:
17:10-17:10
Oh my gosh.

Filmosity:
16:37-17:10
For just Humble Roots?

Humble Roots:
16:37-17:10
Just from Humble Roots

Tracy:
16:37-17:10
Yeah

Filmosity:
17:10-17:10
Wow, amazing.

Tracy:
16:37-17:10
There’s a huge need, really. Like food security is a big thing.

Filmosity:
16:37-17:10
Right, right.

Tracy:
16:37-17:10
Yeah. So, yeah. Being able to love these kids up and feed them this food too is like a lot of these kids would never get a meal like this, right? So being able to love them like this is like it’s a gift. It’s a gift for sure now I’m gonna go feed the crew.

Tracy:
16:37-17:10
Yeah.

Filmosity:
16:37-17:10
All right. Thanks Tracy.

Tracy:
16:37-17:10
Yeah.

Tracy:
16:37-17:10
Take care. Bye.

Filmosity:
16:37-17:10
Bye.

Filmosity:
17:11-17:14
Look at that, community.

Filmosity:
17:15-17:18
Literally, literally as community as you can get it.

Filmosity:
17:18-17:24
Like you serve it, you know, they out here serving the community, serving the school, serving these kids like.

Filmosity:
17:27-17:31
I’m going to tear up.

Filmosity:
17:27-17:31
By the smoke outing.

Filmosity:
17:31-17:31
By the smoke actually. Is that the smoke?

Filmosity:
17:33-17:34
Yeah, it’s all the smoke.

Humble Roots:
17:35-18:27
All right, hey guys I need some help here.

Filmosity:
17:35-18:27
Get back to work chef!

Humble Roots:
17:35-18:27
Alright, hey muscles! I need you to grab the other half of that.

Filmosity:
17:35-18:27
Okay.

Humble Roots:
17:35-18:27
So this is vegetables, yep.

Filmosity:
17:35-18:27
Okay.

Humble Roots:
17:35-18:27
Vegetables for 481 kids.

Filmosity:
17:35-18:27
Oh my God.

Humble Roots:
17:35-18:27
Just going to put it on here.

Filmosity:
17:35-18:27
Okay

Humble Roots:
17:35-18:27
Not allowed to go on the floor.

Filmosity:
17:35-18:27
Are the recipes made… like is there a set like you have to make these certain things or do you guys just come up with the recipes?

Humble Roots:
17:35-18:27
Yeah, we just come up with stuff that kids like. And then we obviously try to make it like one-third veg, one-third protein and carbs.

Humble Roots:
17:35-18:27
Plus they get a little treat. Everyone likes a treat.

Filmosity:
17:35-18:27
We’re gonna give it a we’re gonna give it a hot minute there. We’re smoking. You guys come here more often.

Humble Roots:
17:35-18:27
I’ll grab the first few.

Filmosity:
17:35-18:27
Okay

Humble Roots:
17:35-18:27
Then you’re getting the next one okay?

Filmosity:
17:35-18:27
Okay.

Filmosity:
18:30-18:30
Wow.

Filmosity:
18:31-18:34
Oh, dude, look at that.

Filmosity:
18:36-18:37
Holy, smoked, what was it, beef?

Filmosity:
18:38-18:39
Pork shoulder, I think.

Filmosity:
18:39-18:41
Ah, yeah.

Filmosity:
18:42-18:43
That feels good.

Filmosity:
18:45-18:45
There you go.

Filmosity:
18:46-18:47
Perfect.

Humble Roots:
18:49-18:52
And then when you guys go, we’ll tear this whole thing and clean it all up again.

Filmosity:
18:56-18:56
Nice.

Filmosity:
18:57-18:57
There you go. The smoker.

Filmosity:
18:58-18:58
So let’s saran that.

Humble Roots:
18:59-19:01
And we don’t want to cook it touching this saran wrap.

Humble Roots:
19:01-19:04
I this would be great but no bueno on that one right?

Humble Roots:
19:04-19:07
So this is 100% natural parchment paper.

Humble Roots:
19:08-19:10
I’m just going to put that pork in there.

Humble Roots:
19:11-19:16
This is a cool contraption that Tyler got me so it’s a probe basically that will tell me.

Filmosity:
19:16-19:17
Temperature or something?

Humble Roots:
19:17-19:17
Yeah exactly.

Filmosity:
19:18-19:19
And what’s the temperature needs to be at?

Filmosity:
19:20-19:20
You said 2?

Humble Roots:
19:20-19:21
I’m going to cook it to 202.

Filmosity:
19:21-19:22
202.

Humble Roots:
19:23-19:52
That’s the temperature that muscle fibers start to break down.

Humble Roots:
19:23-19:52
It’s 78 degrees Fahrenheit inside. The ambient temperature it won’t work because it’s actually the whole things in there. If you leave the end out it’ll read the temperature in the oven.

Humble Roots:
19:23-19:52
And then my goal for this is 202 degrees.

Filmosity:
19:23-19:52
Oh whoa. App-controlled.

Humble Roots:
19:23-19:52
So when that hits 202 my phone will start ringing I’ll take all of it out of the oven

Filmosity:
19:53-19:53
Yeah.

Humble Roots:
19:53-19:53
And then it’s done.

Filmosity:
19:54-19:55
A lot of stuff happening.

Filmosity:
19:55-19:57
Curtis just said this is a slow day.

Filmosity:
19:59-20:01
It’s 11:26, two hours.

Filmosity:
20:01-20:03
I don’t even know, so many things have been happening.

Filmosity:
20:03-20:04
Back to Thailand.

Humble Roots:
20:04-20:07
All right, so I’ve just been one manning it.

Humble Roots:
20:07-20:08
It’s been nice and steady.

Filmosity:
20:09-20:11
Is it usually just you, one person here?

Humble Roots:
20:11-20:12
It all depends.

Humble Roots:
20:13-20:15
If it’s really busy, we’ll get two to three people on line.

Humble Roots:
20:16-20:22
But for the most part, if it’s manageable for one person, that means you put in the back, prepping.

Filmosity:
20:22-20:22
Right, right.

Humble Roots:
20:22-20:23
You get more done that way.

Humble Roots:
20:24-20:26
On a weekend is typically two to three people.

Filmosity:
20:26-20:26
Makes sense, okay.

Humble Roots:
20:27-20:28
You met Justis already?

Filmosity:
20:28-20:29
Not yet, Justice, yeah.

Filmosity:
20:30-20:30
Strong, damn.

Humble Roots:
20:30-20:32
He’s our muscles.

Filmosity:
20:32-20:32
Damn. He’s Muscles.

Humble Roots:
20:33-20:33
Heavy lifting.

Humble Roots:
20:38-20:39
All right, do you want to try?

Humble Roots:
20:39-20:40
Don’t be scared of it.

Humble Roots:
20:42-20:43
Shed your fear of it.

Humble Roots:
20:44-20:45
You don’t cook at home, do you?

Filmosity:
20:46-20:52
Tyler was just talking about the system that they have. Ideally, he shouldn’t be leaving his post.

Filmosity:
20:52-20:56
So we saw earlier, in the back with Rita and Kai prepping.

Filmosity:
20:57-20:59
Their job is to make sure he doesn’t leave his post, right?

Filmosity:
21:00-21:02
Whatever he needs, he can come and get it.

Filmosity:
21:02-21:04
The back can wait, but customers can’t wait.

Filmosity:
21:05-21:06
So they can stay here ideally.

Filmosity:
21:07-21:09
They’re a well-oiled machine, like you said,

Filmosity:
21:09-21:10
and it works for them.

Filmosity:
21:11-21:12
Ooh, Salt Bae.

Humble Roots:
21:14-21:14
Salt Bae. Hahaha

Filmosity:
21:26-21:27
What’s Kyle like as a boss?

Humble Roots:
21:28-21:29
He’s great.

Humble Roots:
21:29-21:31
I paid extra for them to say nice stuff.

Humble Roots:
21:32-21:35
He wants to get the most out of you possible.

Humble Roots:
21:36-21:37
And he will challenge you.

Humble Roots:
21:37-21:40
Like one time, I’m making meatballs in the back.

Humble Roots:
21:40-21:47
In his head he’s like, “This guy’s definitely not making meatballs fast enough.” but his way of doing it was like, let’s have a competition.

Humble Roots:
21:47-21:48
Who can make more meatballs?

Humble Roots:
21:49-21:51
And I’m like, okay.

Humble Roots:
21:51-21:54
I know I’ve been kind of not going as fast on the meatballs

Humble Roots:
21:54-21:58
and he has a way of pushing you and getting the best out of it.

Humble Roots:
21:59-22:01
And challenging you, what you got.

Filmosity:
22:01-22:02
Should I take the cups in?

Humble Roots:
22:03-22:05
You want to bust some tables for us?

Humble Roots:
22:05-22:05
Absolutely.

Humble Roots:
22:06-22:07
Here, give me that one there.

Filmosity:
22:07-22:08
Okay.

Humble Roots:
22:08-22:12
You just load it off and then there’s a bottle of quats here and you just give it a spray and a wipe after it.

Filmosity:
22:12-22:13
Sounds good.

Filmosity:
22:13-22:13
Alright.

Filmosity:
22:15-22:16
I’ve never bussed in my life.

Filmosity:
22:20-22:21
You’re really putting me to work today, man.

Filmosity:
22:22-22:23
Just kidding, I asked for it.

Filmosity:
22:25-22:26
Is that how you do it?

Filmosity:
22:26-22:27
You got it.

Filmosity:
22:28-22:28
You figure it out.

Filmosity:
22:30-22:31
Just don’t drop anything.

Filmosity:
22:33-22:34
Like, that’s your only job.

Filmosity:
22:35-22:35
Don’t drop anything?

Filmosity:
22:36-22:36
Don’t drop anything.

Filmosity:
22:43-22:44
I don’t feel confident.

Filmosity:
22:47-22:47
Okay, okay.

Filmosity:
22:54-22:54
What do you mean?

Filmosity:
22:55-22:56
I don’t feel confident.

Filmosity:
22:57-22:57
No, you gotta be.

Filmosity:
23:06-23:09
Okay, you can tell I’ve never worked in the food industry before.

Humble Roots:
23:09-23:11
You’re killing it, Andrew. You’re killing it.

Filmosity:
23:12-23:13
Am I doing it right?

Humble Roots:
23:13-23:33
Chop chop.

Filmosity:
23:13-23:33
Yes, Chef!

Filmosity:
23:13-23:33
You good?

Filmosity:
23:13-23:33
How do you balance with one hand?

Filmosity:
23:35-23:40
You should ask Sky for tips.

Filmosity:
23:35-23:40
People who work in the service industry tell me if this is right.

Filmosity:
23:40-23:41
I see you holding two at a time.

Humble Roots:
23:42-23:43
Oh, you want to do plates, hey?

Filmosity:
23:44-23:46
I don’t know, like, how you do that, man?

Humble Roots:
23:47-23:48
You got three plates, right?

Humble Roots:
23:49-23:52
So you read the bill, imagine there’s stuff on there.

Humble Roots:
23:53-23:54
Thumb, under like that.

Filmosity:
23:55-23:55
Okay.

Humble Roots:
23:55-23:55
Try that.

Filmosity:
23:56-23:56
Okay.

Humble Roots:
23:57-24:02
Then this next part, see, you kind of stick that in your thumb there.

Filmosity:
24:03-24:03
Oh.

Filmosity:
24:04-24:04
Okay.

Humble Roots:
24:04-24:05
See how you got your thumb out?

Humble Roots:
24:05-24:07
You want to kind of see if you can curl it in a bit.

Humble Roots:
24:09-24:13
Yeah. And or there you go. Try it. Don’t drop it.

Humble Roots:
24:15-24:17
Pay for it.

Filmosity:
24:15-24:17
You have to put it on your palm.

Humble Roots:
24:18-24:21
Wanna watch my technique?

Filmosity:
24:18-24:21
Oh okay.

Filmosity:
24:18-24:21
Jenn’s got a technique.

Humble Roots:
24:22-24:36
I have a whole different way to do it.

Filmosity:
24:22-24:36
Oh okay.

Humble Roots:
24:22-24:36
I do two fingers on top and I put this on my pinky.

Filmosity:
24:22-24:36
What?

Humble Roots:
24:22-24:36
So it balances this side on my arm and this side my pinky holds it up and then the food doesn’t touch.

Filmosity:
24:22-24:36
Oh wow.

Filmosity:
24:22-24:36
She’s got a strong pinky.

Filmosity:
24:36-24:40
Yeah.

Humble Roots:
24:36-24:40
Gotta work the babies man.

Humble Roots:
24:40-24:44
My pinky is a little broken. I have little mini pinkies too.

Humble Roots:
24:45-24:47
Mine’s dislocated.

Filmosity:
24:45-24:47
Like that?

Humble Roots:
24:48-24:51
Yeah and then I just balance it with my pinky and it’s not even heavy you’re just basically

Humble Roots:
24:52-24:54
preventing it from tipping this way when you walk.

Filmosity:
24:54-24:55
Then you do four at a time.

Humble Roots:
24:55-24:59
I know I had an old school waitress teach me that one year when I was younger.

Filmosity:
25:00-25:07
As the day winds down, something that’s been cooking the entire day is finally ready for us to eat.

Filmosity:
25:10-25:14
What we were doing earlier when we put it in that smoker, now it’s all ready.

Humble Roots:
25:15-25:16
Smoked hot dog brisket. Cheers.

Filmosity:
25:23-25:27
Good. Perfect. Smoked meats.

Filmosity:
25:30-25:33
Mmm. Oh, okay.

Filmosity:
25:37-25:46
It just melts.

Humble Roots:
25:37-25:46
Don’t eat that every day. It will not be good for you. Your cardiologist will be your best friend.

Filmosity:
25:37-25:46
Tyler, how long have you been an entrepreneur?

Humble Roots:
25:48-25:58
About 22 years 22 years. Yeah with 22 years of experience of being an entrepreneur Someone watching this wants to start a business. What advice would you tell them?

Humble Roots:
25:59-26:13
I would tell them if you’re starting a business or you’re looking to start a business, make sure it’s purpose-driven and it aligns not only with who you are right now, but who you plan on being in the future.

Filmosity:
25:59-26:13
How does someone find the purpose?

Humble Roots:
25:59-26:13
Good question.

Humble Roots:
26:13-26:27
There’s Many ways I guess but for me it was just doing that deep dive inwards drown out the noise declutter your mind and get down to kind of like the root of what drives you, what motivates you.

Humble Roots:
26:27-26:30
And again, how does that align with the future version of yourself?

Humble Roots:
26:30-26:35
And would you recommend, you know, finding the purpose first before starting the business?

Humble Roots:
26:36-26:38
It’s a lot easier to do it before than during.

Humble Roots:
26:39-26:43
You have a lot more time before you open a business than you have while operating it.

Humble Roots:
26:43-26:44
So yeah, I would recommend that.

Filmosity:
26:45-26:50
To end the show, I have a tradition where I ask you the question that the previous business owner wanted to ask you.

Filmosity:
26:50-26:54
And here is that question I’ll play for you right now.

Bak’d Cookies – Jessica:
26:54-26:58
I think my question would be is how do you define success for yourself?

Bak’d Cookies – Jessica:
26:58-27:05
Like what would be your moment or if it’s already happened, what was your moment of holy crap, I’ve made it.

Bak’d Cookies – Jessica:
27:05-27:06
This is success.

Filmosity:
27:08-27:08
That’s the question.

Humble Roots:
27:09-27:10
All right. That’s a good question.

Humble Roots:
27:11-27:19
The moment I have felt success, there’s been micro moments where you could sit back and you kind of look back on your journey and you go, look how far we’ve come.

Filmosity:
27:20-27:20
Yeah.

Humble Roots:
27:20-27:49
And you let it soak in for a bit. But my personality type is I don’t think i’m ever gonna allow myself to feel that full-on success, because I’m driven.

Humble Roots:
27:20-27:49
It keeps me going. But there have been moments within my team and in my business where I have kind of sat back and been proud of myself and proud of my team and seeing these original situations that would have never happened if we just didn’t take a gamble or take a risk and it’s forged many many relationships including my wife I met her at this business, standing right there.

Humble Roots:
27:50-27:51
Lifelong friendships.

Humble Roots:
27:51-27:58
That’s the type of success that I think I value more than any kind of financial or award or anything like that.

Humble Roots:
27:58-28:00
It’s the relationships I forged.

Filmosity:
28:00-28:04
And what question do you have for the next business owner on the show?

Humble Roots:
28:04-28:06
Next business owner.

Humble Roots:
28:07-28:14
What are you doing to maintain the boundaries between work and your personal life?

Humble Roots:
28:15-28:19
And I guess essentially, how are you maintaining work-life balance?

Filmosity:
28:20-28:21
There you go, that’s a good one.

Filmosity:
28:22-28:23
One last question actually.

Filmosity:
28:24-28:28
How did I do as a employee for half the day of yours?

Filmosity:
28:31-28:32
I don’t feel confident.

Humble Roots:
28:33-28:34
You killed it?

Filmosity:
28:35-28:36
Be honest.

Humble Roots:
28:37-28:43
From what I saw, your attitude, work ethic, those are the things I can’t teach.

Humble Roots:
28:44-28:46
And you had it in spades, so I appreciate it.

Filmosity:
28:46-28:47
But I couldn’t flip the…

Humble Roots:
28:48-28:49
Shed your fear of it.

Humble Roots:
28:50-28:51
You don’t cook at home, do you?

Humble Roots:
28:52-28:53

Humble Roots:
00:00-00:01
Shed your fear of it.

Humble Roots:
00:01-00:03
You don’t cook at home do you?

Filmosity:
00:04-00:05
Today, I visited a restaurant.

Filmosity:
00:06-00:07
A humble restaurant, you could say.

Filmosity:
00:08-00:11
And I got to experience what it’s like to work a typical day here.

Humble Roots:
00:11-00:13
You wanna bust some tables for us?

Humble Roots:
00:13-00:13
Absolutely.

Filmosity:
00:14-00:19
From chopping potatoes, a little thick, busting tables, I feel confident.

Filmosity:
00:20-00:22
And even seeing unexpected problems arise.

Humble Roots:
00:23-00:24
You know what?

Humble Roots:
00:25-00:27
This is kind of a not good.

Filmosity:
00:27-00:30
My name is Andrew, and today, Today, we’re at Humble Roots.

Humble Roots:
00:35-00:37
Here is a storm, sure I get it.

Humble Roots:
00:37-00:38
On a day like this, I have no idea.

Humble Roots:
00:39-00:39
But we’re good.

Filmosity:
00:40-00:42
We’re not even filming, damn it.

Filmosity:
00:42-00:43
We missed the power went up.

Humble Roots:
00:43-00:44
That’s a day in the life type.

Humble Roots:
00:45-00:46
There we go.

Filmosity:
00:46-00:48
Let’s go into the back kitchen here.

Humble Roots:
00:53-00:54
All right, so mine’s almost set up.

Humble Roots:
00:55-00:57
So we’ll just make it look a little neat and tidy in here.

Filmosity:
00:57-00:59
You just start like an hour before prep?

Humble Roots:
00:59-01:04
Typically if we open at nine, start early, and prep is just something we gauge day to day.

Filmosity:
01:04-01:07
So what’s the mindset you have every day as you come in here to prep?

Filmosity:
01:08-01:10
You know, you said you’re preparing for the calm before the storm.

Filmosity:
01:10-01:11
Is it like, are you excited?

Filmosity:
01:12-01:12
Are you nervous?

Humble Roots:
01:13-01:13
You know what?

Humble Roots:
01:13-01:17
I’m always excited to come in and see how the day pans out.

Humble Roots:
01:17-01:22
It helps when you love what you do, you love the people you do it with, and you love the people you do it for.

Filmosity:
01:22-01:24
Customer comes in early, you gotta come in.

Filmosity:
01:24-01:25
You gotta do the work for them.

Filmosity:
01:25-01:26
Service industry.

Humble Roots:
01:27-01:28
And this is where I find out what we’re missing.

Humble Roots:
01:29-01:32
So the first order of the day is gonna be a little sloppier.

Humble Roots:
01:37-01:38
Okay, so I got that on.

Humble Roots:
01:39-01:42
So what we do is, they’re called coddled eggs.

Filmosity:
01:42-01:42
Okay.

Humble Roots:
01:45-01:51
So because we’re cooking this for 10 minutes before we open, my kitchen’s not as hot as I usually want it.

Filmosity:
01:51-01:51
Right.

Humble Roots:
01:52-01:54
Might affect my timing a little bit, but all good.

Filmosity:
01:55-01:56
You gotta be adaptable.

Humble Roots:
01:56-01:57
You gotta be adaptable.

Humble Roots:
01:57-01:58
Crisp those up.

Humble Roots:
01:58-02:01
I would like that flat top to be a little hotter, but…

Humble Roots:
02:07-02:08
Just wish this equipment was a little hotter.

Filmosity:
02:10-02:11
This is the first order of the day.

Humble Roots:
02:11-02:13
First order of the day.

Humble Roots:
02:13-02:14
And we’re doing it five minutes before we’re open.

Filmosity:
02:15-02:18
How many orders do you usually do on a given day?

Humble Roots:
02:18-02:20
Anywhere between, I’d say 150 to 200.

Humble Roots:
02:22-02:27
Meal program for the schools, add another 500 meals to that, and a catering could throw that off a bit too.

Humble Roots:
02:27-02:29
A weekend, probably 200, 250.

Humble Roots:
02:30-02:35
And that’s, you know, for here to go, online ordering, Skips, Ubers.

Humble Roots:
02:36-02:37
So yeah, keeps us busy.

Filmosity:
02:40-02:41
He’s cooking, he’s literally cooking.

Filmosity:
02:42-02:42
Literally cooking.

Humble Roots:
02:45-02:46
You know what?

Humble Roots:
02:47-02:48
He didn’t light my flat top.

Humble Roots:
02:48-02:49
This is kind of a…

Humble Roots:
02:51-02:52
Not good.

Filmosity:
02:53-02:53
Uh oh.

Humble Roots:
02:54-02:56
It’s okay. We’ll light it. It’s just going to delay.

Filmosity:
02:57-03:00
Take a while.

Humble Roots:
02:57-03:00
Yeah. Kai, this flat top’s all lit.

Humble Roots:
03:00-03:02
Oh yeah. Yeah.

Humble Roots:
03:03-03:04
Turn the gas off.

Humble Roots:
03:04-03:05
But you didn’t relight it? No.

Humble Roots:
03:07-03:10
When the gas went off, he relit everything but this.

Humble Roots:
03:11-03:14
And this takes about 30 minutes to heat. This is usually lit.

Humble Roots:
03:15-03:17
It’s usually lit by like eight or five.

Humble Roots:
03:19-03:21
Stupid power outage. Okay. One second.

Humble Roots:
03:22-03:24
Kai, I need you to get this going for me.

Humble Roots:
03:24-03:29
Please. I don’t know why it’s not lighting okay this is where you got to use your deductive reasoning.

Humble Roots:
03:29-03:58
How could i fix this problem?

Filmosity:
03:29-03:58
What are you gonna do instead now?

Humble Roots:
03:29-03:58
We’re gonna fire in the oven and we’re gonna use pans.

Humble Roots:
03:29-03:58
I was wondering why this food wasn’t cooking the way I wanted it to.

Humble Roots:
03:29-03:58
Pan fry that. This is just one of those things in a restaurant where people want their food within a certain time frame, you just got to figure it out.

Humble Roots:
03:29-03:58
So chefs, what I’ve learned, because i now identify as a chef, thank them so much, are some of the most creative and like resourceful and like amazing at solving problems and being able to think on their feet.

Humble Roots:
03:58-04:00
And I think part of that is just necessity.

Humble Roots:
04:01-04:06
When you’re doing something that’s so high tempo, you just naturally create solutions

Humble Roots:
04:06-04:07
On the fly.

Filmosity:
04:07-04:08
Just like that?

Filmosity:
04:08-04:09
Just like what you did now?

Humble Roots:
04:09-04:10
Just like that.

Filmosity:
04:10-04:10
Okay.

Humble Roots:
04:11-04:12
Curtis.

Humble Roots:
04:12-04:13
What’s up, yo?

Humble Roots:
04:13-04:14
You’re Curtis?

Humble Roots:
04:14-04:16
Never have a 12 year old daughter.

Humble Roots:
04:16-04:17
Ever.

Humble Roots:
04:17-04:17
Or two.

Humble Roots:
04:18-04:20
Did you forget to turn the flat top on?

Humble Roots:
04:20-04:23
No, it was turned on but the power went out.

Humble Roots:
04:23-04:24
How did the power go out?

Humble Roots:
04:25-04:26
Welcome to the ALR.

Filmosity:
04:27-04:27
You’re Curtis, right?

Humble Roots:
04:27-04:28
Yeah, what’s your name?

Filmosity:
04:28-04:29
Andrew.

Filmosity:
04:29-04:30
This is Samson behind the camera.

Humble Roots:
04:30-04:31
Hey, nice to meet you.

Filmosity:
04:31-04:31
Nice to meet you.

Humble Roots:
04:32-04:33
We’re going to start to do some smoking today.

Filmosity:
04:33-04:34
Okay.

Filmosity:
04:34-04:34
Okay.

Filmosity:
04:35-04:36
Oh, right.

Humble Roots:
04:36-04:38
This is the big dog right here.

Filmosity:
04:38-04:39
What actually is this?

Filmosity:
04:39-04:43
Upon first look, I thought it looked like an outhouse for a second.

Humble Roots:
04:43-04:43
It is.

Filmosity:
04:43-04:44
It is an outhouse.

Humble Roots:
04:45-04:47
No, it’s a custom-made smoker.

Humble Roots:
04:47-04:54
It’s been here since before my time. So basically we do a lot of our smoking here, our house turkey, all that kind of stuff is all done here.

Humble Roots:
04:55-05:02
Yeah. So basically, when we’re real busy, I’ll put like all the meat up here and then open the door and away it goes.

Filmosity:
05:03-05:08
Okay

Humble Roots:
05:03-05:08
And then you just don’t want to breathe in.

Filmosity:
05:03-05:08
Oh, wow.

Humble Roots:
05:03-05:08
Right?

Humble Roots:
05:10-06:41
And then just the smoke keeps going up and so I’m gonna lay all the pork shoulders up in there.

Filmosity:
05:10-06:41
Yeah,

Humble Roots:
05:10-06:41
And then

Filmosity:
05:10-06:41
That’s cool. I’ve never seen that before.

Humble Roots:
05:10-06:41
No, you know what neither did I. It’s basically like an offset smoker. You’ll see them in all like the shows and stuff right out there side by each, but this one’s custom-built.

Filmosity:
05:10-06:41
Cool

Humble Roots:
05:10-06:41
But yeah, we had a big day today. We got the meal program I don’t know if you told you about the meal program.

Filmosity:
05:10-06:41
No, we’ve just been shooting them up there.

Humble Roots:
05:10-06:41
So we feed 481 kids twice a week here in Maple Ridge.

Humble Roots:
05:10-06:41
So all that food comes from this kitchen. So I’ll just show you kind of how we get started order just came in now.

Humble Roots:
05:10-06:41
So this rack is going for all the kids and it’s not my pork underneath it.

Humble Roots:
05:10-06:41
So this is the pork shoulder we’re gonna smoke and then we have brisket. That’s going to go in tomorrow.

Filmosity:
05:10-06:41
Yeah.

Humble Roots:
05:10-06:41
So we put that outside as well. That’s veggies for a hundred kids Veggies from 45 kids all the hot food.

Filmosity:
05:10-06:41
So you guys take care of the lunches for every every week.

Humble Roots:
05:10-06:41
Every week, twice a week, on Wednesday and Friday

Filmosity:
05:10-06:41
Wednesday and Friday.

Humble Roots:
05:10-06:41
Yeah, we feed 481 kids in Maple Ridge, Pitt Meadows and –

Filmosity:
05:10-06:41
That’s huge. Amazing.

Humble Roots:
05:10-06:41
You know it’s funny when I don’t know if you guys remember when Facebook came out.

Filmosity:
05:10-06:41
Yes

Humble Roots:
05:10-06:41
Okay.

Filmosity:
05:10-06:41
Yeah, we were alive.

Humble Roots:
06:41-06:41
You were alive?

Humble Roots:
05:10-06:41
It says, you know, what your job is, right?

Humble Roots:
06:41-06:43
So I put chef

Humble Roots:
06:43-06:52
And then in brackets, I was like weight lifter, plumber, psychologist, sheriff, electrician, because that’s what we have to do as chefs.

Humble Roots:
06:52-06:53
There’s so many things.

Filmosity:
06:53-06:55
I don’t think people notice that.

Filmosity:
06:55-06:57
Well, the chef, you just cook food.

Humble Roots:
06:57-07:01
No, there’s no the profit margin in the restaurant business is not the greatest.

Filmosity:
07:01-07:02
Right.

Humble Roots:
07:02-07:08
You know, anyone who owns a Microsoft or something that will tell you the last thing they would want to be to make money is be a chef.

Humble Roots:
07:08-07:10
But you gotta love it. This is the biggest thing.

Filmosity:
07:10-07:11
And that’s why you do this.

Humble Roots:
07:12-07:13
Yeah, it is.

Filmosity:
07:14-07:16
What about cooking and serving people food?

Filmosity:
07:16-07:19
Like what was that that ignites your passion?

Humble Roots:
07:20-07:20
It’s the smiles.

Humble Roots:
07:23-07:25
It’s looking out and seeing people talk and they don’t know you’re watching.

Humble Roots:
07:26-07:27
You see them smile and chew away.

Humble Roots:
07:28-07:33
You know, it’s a special thing to realize that what you have made goes in someone’s body.

Humble Roots:
07:34-07:35
Like it’s super deep.

Humble Roots:
07:36-07:37
Yeah, it is deep, right?

Humble Roots:
07:38-07:41
Um, why I do it, I don’t know. I love it now. I’m kind of stuck.

Filmosity:
07:44-07:46
It’s only been 20 minutes since opening.

Filmosity:
07:49-07:53
There’s just so much going on. Respect to these restaurant owners.

Humble Roots:
07:56-07:58
This is why Curtis is so jacked.

Humble Roots:
07:58-08:00
You know, I was broken for the first year.

Humble Roots:
08:01-08:05
So when I get home, my wife makes me take a four hour shower.

Humble Roots:
08:07-08:08
Because I smell all smoky.

Humble Roots:
08:09-08:09
All smoky. Yeah.

Filmosity:
08:09-08:10
Yeah.

Humble Roots:
08:10-08:14
So this is going to go in for about probably two hours.

Humble Roots:
08:16-08:18
We put the fat side up.

Humble Roots:
08:19-08:24
So as you’re cooking it, that kind of melts through the meat.

Filmosity:
08:19-08:24
Yeah.

Humble Roots:
08:25-08:27
And then we’ll take it inside and finish it in the oven.

Humble Roots:
08:28-08:30
Just because there’s a lot more control.

Filmosity:
08:28-08:30
Right.

Humble Roots:
08:31-08:32
Yeah.

Filmosity:
08:32-08:33
Wow.

Humble Roots:
08:32-08:33
So there she goes.

Filmosity:
08:38-08:40
How are you guys today?

Humble Roots:
08:40-08:40
This is Jen.

Filmosity:
08:41-08:42
What are we doing right now, Jen?

Humble Roots:
08:42-08:44
About to go take and order at a table.

Humble Roots:
08:44-08:48
Just going to make some drinks for them and then I’m going to pop outside and take some desserts out to a customer.

Humble Roots:
08:49-08:49
Okay, cool.

Humble Roots:
08:50-08:51
Steam a latte?

Humble Roots:
08:52-08:53
We call her Big Red.

Humble Roots:
08:56-08:57
Do a little art.

Humble Roots:
09:07-09:09
Of course it’s a staff cup and I get to like a boss.

Humble Roots:
09:10-09:11
He’s the boss but I’m like a boss.

Humble Roots:
09:12-09:14
Okay order up.

Humble Roots:
09:15-09:15
Lou.

Humble Roots:
09:17-09:21
You are my son I am your father.

Humble Roots:
09:22-09:23
Let’s cut some spuds.

Humble Roots:
09:23-09:25
You guys saw Central Command here?

Humble Roots:
09:25-09:26
The war room.

Filmosity:
09:26-09:28
This is central command?

Humble Roots:
09:28-09:31
That’s central command right there. We redo it every day.

Humble Roots:
09:32-09:35
On the right hand side we have one thing to get ordered.

Humble Roots:
09:36-09:37
And I try and remember to do it.

Humble Roots:
09:38-09:40
But sometimes Rita has to remind me.

Humble Roots:
09:41-09:47
So I go with this list to the fridge and then I get what we need for the day.

Humble Roots:
09:47-09:52
And I write it down over there so I need to see what I have to do for the day.

Filmosity:
09:53-09:56
So you control the central command. You tell everyone what to do.

Humble Roots:
09:56-09:57
She’s the boss.

Filmosity:
09:57-09:58
She’s the boss, you too.

Humble Roots:
09:58-10:00
No, I’m making the list and I’m making whatever.

Humble Roots:
10:00-10:02
She’s the mama and I’m the papa.

Humble Roots:
10:04-10:05
We’ll give this to Uncle Tyler.

Filmosity:
10:06-10:06
Uncle Tyler.

Humble Roots:
10:07-10:07
Uncle Tyler.

Humble Roots:
10:12-10:13
Here you go Tyler

Humble Roots:
10:13-10:16
Okay, so my flat top is still not where I want it.

Humble Roots:
10:17-10:19
An hour in, I can’t explain it.

Humble Roots:
10:19-10:22
Stupid power outage, but it’s all good.

Filmosity:
10:22-10:24
Tyler, do you have an extra apron for me?

Filmosity:
10:24-10:25
I feel out of place.

Humble Roots:
10:25-10:26
We do, yeah.

Humble Roots:
10:26-10:27
You want one?

Filmosity:
10:27-10:28
I would like one.

Humble Roots:
10:32-10:32
Thank you, Kyle.

Humble Roots:
10:33-10:34
Oh, you’re gonna be an assistant?

Filmosity:
10:34-10:36
I got the, yes, give me the assistant.

Filmosity:
10:36-10:37
I’ll do whatever you guys need me to do.

Filmosity:
10:37-10:38
Thanks, Kai.

Filmosity:
10:38-10:39
Thanks, Kai.

Filmosity:
10:39-10:40
Let’s do this.

Filmosity:
10:41-10:41
I don’t know what I’m doing.

Filmosity:
10:42-10:46
He’s officially– – I’m a professional distraction.

Filmosity:
10:47-10:48
I’m in people’s way all the time.

Filmosity:
10:48-10:50
We are in their way.

Filmosity:
10:50-10:52
That should be the format, in your way.

Filmosity:
10:55-10:57
I’m part of the family now.

Humble Roots:
10:57-10:57
Oh yay!

Humble Roots:
10:58-10:59
You’re part of the family.

Filmosity:
10:59-11:01
I don’t know, I’ll do whatever.

Filmosity:
11:02-11:04
Yeah, get him to chop for you.

Filmosity:
11:04-11:06
I’ve never worked in a restaurant before.

Humble Roots:
11:07-11:08
Do we need to worry about you?

Filmosity:
11:10-11:11
I’ve never had a real job.

Filmosity:
11:11-11:12
This is all I do.

Humble Roots:
11:12-11:12
Look at this.

Filmosity:
11:14-11:14
Oh shoot.

Filmosity:
11:15-11:16
We didn’t get our breakfast yet.

Filmosity:
11:17-11:19
Okay, go place that order first.

Filmosity:
11:23-11:24
Does it look like I work here?

Filmosity:
11:25-11:25
Yeah.

Filmosity:
11:26-11:27
You gonna take my order or what?

Filmosity:
11:28-11:30
How was your experience today?

Filmosity:
11:31-11:31
Hey Sky.

Humble Roots:
11:32-11:32
Hey.

Filmosity:
11:32-11:32
Andrew.

Humble Roots:
11:33-11:34
Nice to meet you.

Filmosity:
11:34-11:34
Nice to meet you.

Filmosity:
11:35-11:36
This is Samson behind the camera.

Humble Roots:
11:37-11:37
Hi.

Filmosity:
11:38-11:38
Hey.

Humble Roots:
11:38-11:40
Okay, what can I get for you guys today?

Filmosity:
11:40-11:41
A professional small talker.

Humble Roots:
11:41-11:42
I’m a big talker.

Filmosity:
11:43-11:44
Yeah, no, that’s good.

Filmosity:
11:44-11:45
Perfect.

Filmosity:
11:45-11:49
I think Samson wanted the classic breakfast.

Humble Roots:
11:49-11:51
Do a traditional classic?

Filmosity:
11:51-11:53
Me, Curtis recommended the morning pro.

Humble Roots:
11:53-11:55
Oh, lovely, one of my favorites.

Filmosity:
11:55-11:56
Okay, well.

Humble Roots:
11:56-11:58
I’m a traditional girl too, but I eat that every day.

Filmosity:
11:58-11:59
Yeah.

Humble Roots:
12:01-12:02
A lot of chefs hear this in their sleep.

Humble Roots:
12:07-12:08
That’s your order, hey.

Filmosity:
12:08-12:08
Yeah.

Humble Roots:
12:11-12:16
I cook this a little bit, then I put raw broccoli in it and all the other veggies.

Filmosity:
12:16-12:17
Do you need some muscles?

Humble Roots:
12:17-12:17
What was that?

Humble Roots:
12:18-12:18
Do you need some muscle?

Humble Roots:
12:19-12:19
Where?

Filmosity:
12:22-12:23
Me? Look at him.

Humble Roots:
12:36-12:39
So that’s about half the vegetables.

Filmosity:
12:40-12:41
There’s another one coming.

Humble Roots:
12:43-12:44
I’ll put them all in raw.

Humble Roots:
12:46-12:48
And the peas are frozen and it helps cool it down quickly.

Humble Roots:
12:48-12:50
So it’s obviously food safe.

Filmosity:
12:50-12:50
Yeah.

Filmosity:
12:51-12:54
Do you want to help Sharida with potatoes?

Humble Roots:
12:54-12:56
Yeah, what would you like to do?

Filmosity:
12:56-12:58
I don’t know, the easiest task.

Humble Roots:
12:59-13:01
You want to try to cut some hash?

Filmosity:
13:02-13:02
Sure.

Humble Roots:
13:02-13:05
So you’re going to get your potato, you’re going to cut it in half.

Filmosity:
13:05-13:06
Okay.

Humble Roots:
13:07-13:09
And then this one is half again.

Filmosity:
13:09-13:09
Okay.

Humble Roots:
13:10-13:11
And then you’re going to cut it.

Filmosity:
13:12-13:12
Okay.

Humble Roots:
13:13-13:15
You don’t have to be quick.

Filmosity:
13:15-13:19
Just make sure the consistency is good.

Humble Roots:
13:19-13:21
like no bigger than this one.

Filmosity:
13:21-13:22
All right, let’s see how I do.

Humble Roots:
13:22-13:23
Let’s do it.

Filmosity:
13:24-13:25
I got small hands.

Humble Roots:
13:26-13:27
Yes, put them on.

Filmosity:
13:28-13:31
This is how fast Rita is.

Humble Roots:
13:31-13:34
Yeah, but Rita’s doing every day, right?

Humble Roots:
13:35-13:36
You gotta just practice.

Humble Roots:
13:44-13:46
All right, one up.

Filmosity:
13:52-13:53
A little thick.

Filmosity:
13:53-13:55
How do you cut so fast, Rita?

Humble Roots:
13:55-13:56
I yell at her all the time.

Humble Roots:
13:56-13:57
Yeah!

Humble Roots:
13:57-13:58
Faster!

Humble Roots:
13:58-13:58
Faster!

Humble Roots:
13:59-13:59
Come on!

Humble Roots:
13:59-14:00
Go, go, go!

Humble Roots:
14:00-14:02
You don’t have time to lose!

Humble Roots:
14:03-14:03
Come on!

Humble Roots:
14:05-14:06
No, just kidding.

Humble Roots:
14:06-14:06
Practice.

Filmosity:
14:07-14:10
When new hires come in, they’re obviously not as fast as well.

Humble Roots:
14:10-14:10
You know what?

Humble Roots:
14:11-14:12
The speed will come.

Filmosity:
14:13-14:13
Right.

Humble Roots:
14:14-14:20
Just practice what you do, make sure it’s a good size and then your speed will come.

Filmosity:
14:31-14:32
Kai, what do you think of Andrew’s uh…

Filmosity:
14:33-14:33
Cutting?

Humble Roots:
14:34-14:39
Well, I mean I’m not a master but I think it looks pretty clean over here.

Filmosity:
14:39-14:40
You’re nice.

Humble Roots:
14:40-14:42
Hey, we gotta check the pork guys then you can go eat.

Filmosity:
14:42-14:43
I know how to cut potatoes.

Humble Roots:
14:47-14:53
I’m just gonna roll it over a bit and then we’ll shut it for about another 45 minutes or so and then it’s gonna go straight in the oven after.

Humble Roots:
14:53-14:58
Could cook this in here all day but stuff it saves stuff like that so I gotta make sure I get it in the oven.

Humble Roots:
14:58-14:59
I was just here to be your spotter.

Filmosity:
14:59-15:00
Oh thank you.

Humble Roots:
15:00-15:01
Just sketching my brain out there.

Humble Roots:
15:02-15:03
I’ve got some lunch ready for you guys.

Filmosity:
15:03-15:04
Oh.

Humble Roots:
15:04-15:05
Come on out.

Filmosity:
15:09-15:10
How’s it look?

Filmosity:
15:10-15:11
It looks very good.

Filmosity:
15:11-15:11
I like this vibe.

Filmosity:
15:12-15:13
Homey.

Filmosity:
15:14-15:16
The workers feel like it’s a family.

Filmosity:
15:16-15:19
Customers are probably, you know, regulars.

Filmosity:
15:19-15:20
All right, dig in.

Filmosity:
15:21-15:22
Oh my gosh.

Filmosity:
15:39-15:40
That is so good.

Filmosity:
15:40-15:41
That’s actually really good.

Filmosity:
15:41-15:43
That is really good.

Filmosity:
15:43-16:10
like mmmm.

Filmosity:
15:43-16:10
I have no words.

Filmosity:
15:43-16:10
Hi, Andrew.

Tracy:
15:43-16:10
Tracy, nice to meet you.

Filmosity:
15:43-16:10
Hi, Samson

Tracy:
15:43-16:10
Hi, hello.

Humble Roots:
15:43-16:10
So Tracy does the work for

Tracy:
15:43-16:10
Eric Langton, yeah.

Filmosity:
15:43-16:10
Okay, so just coming to pick up their lunches?

Tracy:
16:10-16:15
Lunches to feed the kids up the road at the school there.

Tracy:
16:15-16:16
Yeah, lots of kids.

Filmosity:
16:17-16:19
Premium lunch program, Humble Roots.

Tracy:
16:19-16:20
Yeah.

Humble Roots:
16:20-16:21
And then this goes out to a car.

Filmosity:
16:23-16:23
The muscle.

Humble Roots:
16:24-16:24
Yeah.

Filmosity:
16:24-16:25
I don’t got that.

Filmosity:
16:29-16:33
Is this like a program that is signed up with Humble Roots?

Tracy:
16:33-16:35
Yeah, so there is like provincial funds.

Tracy:
16:35-16:36
It’s called Feeding Future Students.

Filmosity:
16:36-16:37
Got it.

Tracy:
16:37-17:10
Yeah that budget helps feed kids that are vulnerable and need the help.

Humble Roots:
16:37-17:10
And it’s about 40 000 meals a year.

Filmosity:
17:10-17:10
Oh my gosh.

Filmosity:
16:37-17:10
For just Humble Roots?

Humble Roots:
16:37-17:10
Just from Humble Roots

Tracy:
16:37-17:10
Yeah

Filmosity:
17:10-17:10
Wow, amazing.

Tracy:
16:37-17:10
There’s a huge need, really. Like food security is a big thing.

Filmosity:
16:37-17:10
Right, right.

Tracy:
16:37-17:10
Yeah. So, yeah. Being able to love these kids up and feed them this food too is like a lot of these kids would never get a meal like this, right? So being able to love them like this is like it’s a gift. It’s a gift for sure now I’m gonna go feed the crew.

Tracy:
16:37-17:10
Yeah.

Filmosity:
16:37-17:10
All right. Thanks Tracy.

Tracy:
16:37-17:10
Yeah.

Tracy:
16:37-17:10
Take care. Bye.

Filmosity:
16:37-17:10
Bye.

Filmosity:
17:11-17:14
Look at that, community.

Filmosity:
17:15-17:18
Literally, literally as community as you can get it.

Filmosity:
17:18-17:24
Like you serve it, you know, they out here serving the community, serving the school, serving these kids like.

Filmosity:
17:27-17:31
I’m going to tear up.

Filmosity:
17:27-17:31
By the smoke outing.

Filmosity:
17:31-17:31
By the smoke actually. Is that the smoke?

Filmosity:
17:33-17:34
Yeah, it’s all the smoke.

Humble Roots:
17:35-18:27
All right, hey guys I need some help here.

Filmosity:
17:35-18:27
Get back to work chef!

Humble Roots:
17:35-18:27
Alright, hey muscles! I need you to grab the other half of that.

Filmosity:
17:35-18:27
Okay.

Humble Roots:
17:35-18:27
So this is vegetables, yep.

Filmosity:
17:35-18:27
Okay.

Humble Roots:
17:35-18:27
Vegetables for 481 kids.

Filmosity:
17:35-18:27
Oh my God.

Humble Roots:
17:35-18:27
Just going to put it on here.

Filmosity:
17:35-18:27
Okay

Humble Roots:
17:35-18:27
Not allowed to go on the floor.

Filmosity:
17:35-18:27
Are the recipes made… like is there a set like you have to make these certain things or do you guys just come up with the recipes?

Humble Roots:
17:35-18:27
Yeah, we just come up with stuff that kids like. And then we obviously try to make it like one-third veg, one-third protein and carbs.

Humble Roots:
17:35-18:27
Plus they get a little treat. Everyone likes a treat.

Filmosity:
17:35-18:27
We’re gonna give it a we’re gonna give it a hot minute there. We’re smoking. You guys come here more often.

Humble Roots:
17:35-18:27
I’ll grab the first few.

Filmosity:
17:35-18:27
Okay

Humble Roots:
17:35-18:27
Then you’re getting the next one okay?

Filmosity:
17:35-18:27
Okay.

Filmosity:
18:30-18:30
Wow.

Filmosity:
18:31-18:34
Oh, dude, look at that.

Filmosity:
18:36-18:37
Holy, smoked, what was it, beef?

Filmosity:
18:38-18:39
Pork shoulder, I think.

Filmosity:
18:39-18:41
Ah, yeah.

Filmosity:
18:42-18:43
That feels good.

Filmosity:
18:45-18:45
There you go.

Filmosity:
18:46-18:47
Perfect.

Humble Roots:
18:49-18:52
And then when you guys go, we’ll tear this whole thing and clean it all up again.

Filmosity:
18:56-18:56
Nice.

Filmosity:
18:57-18:57
There you go. The smoker.

Filmosity:
18:58-18:58
So let’s saran that.

Humble Roots:
18:59-19:01
And we don’t want to cook it touching this saran wrap.

Humble Roots:
19:01-19:04
I this would be great but no bueno on that one right?

Humble Roots:
19:04-19:07
So this is 100% natural parchment paper.

Humble Roots:
19:08-19:10
I’m just going to put that pork in there.

Humble Roots:
19:11-19:16
This is a cool contraption that Tyler got me so it’s a probe basically that will tell me.

Filmosity:
19:16-19:17
Temperature or something?

Humble Roots:
19:17-19:17
Yeah exactly.

Filmosity:
19:18-19:19
And what’s the temperature needs to be at?

Filmosity:
19:20-19:20
You said 2?

Humble Roots:
19:20-19:21
I’m going to cook it to 202.

Filmosity:
19:21-19:22
202.

Humble Roots:
19:23-19:52
That’s the temperature that muscle fibers start to break down.

Humble Roots:
19:23-19:52
It’s 78 degrees Fahrenheit inside. The ambient temperature it won’t work because it’s actually the whole things in there. If you leave the end out it’ll read the temperature in the oven.

Humble Roots:
19:23-19:52
And then my goal for this is 202 degrees.

Filmosity:
19:23-19:52
Oh whoa. App-controlled.

Humble Roots:
19:23-19:52
So when that hits 202 my phone will start ringing I’ll take all of it out of the oven

Filmosity:
19:53-19:53
Yeah.

Humble Roots:
19:53-19:53
And then it’s done.

Filmosity:
19:54-19:55
A lot of stuff happening.

Filmosity:
19:55-19:57
Curtis just said this is a slow day.

Filmosity:
19:59-20:01
It’s 11:26, two hours.

Filmosity:
20:01-20:03
I don’t even know, so many things have been happening.

Filmosity:
20:03-20:04
Back to Thailand.

Humble Roots:
20:04-20:07
All right, so I’ve just been one manning it.

Humble Roots:
20:07-20:08
It’s been nice and steady.

Filmosity:
20:09-20:11
Is it usually just you, one person here?

Humble Roots:
20:11-20:12
It all depends.

Humble Roots:
20:13-20:15
If it’s really busy, we’ll get two to three people on line.

Humble Roots:
20:16-20:22
But for the most part, if it’s manageable for one person, that means you put in the back, prepping.

Filmosity:
20:22-20:22
Right, right.

Humble Roots:
20:22-20:23
You get more done that way.

Humble Roots:
20:24-20:26
On a weekend is typically two to three people.

Filmosity:
20:26-20:26
Makes sense, okay.

Humble Roots:
20:27-20:28
You met Justis already?

Filmosity:
20:28-20:29
Not yet, Justice, yeah.

Filmosity:
20:30-20:30
Strong, damn.

Humble Roots:
20:30-20:32
He’s our muscles.

Filmosity:
20:32-20:32
Damn. He’s Muscles.

Humble Roots:
20:33-20:33
Heavy lifting.

Humble Roots:
20:38-20:39
All right, do you want to try?

Humble Roots:
20:39-20:40
Don’t be scared of it.

Humble Roots:
20:42-20:43
Shed your fear of it.

Humble Roots:
20:44-20:45
You don’t cook at home, do you?

Filmosity:
20:46-20:52
Tyler was just talking about the system that they have. Ideally, he shouldn’t be leaving his post.

Filmosity:
20:52-20:56
So we saw earlier, in the back with Rita and Kai prepping.

Filmosity:
20:57-20:59
Their job is to make sure he doesn’t leave his post, right?

Filmosity:
21:00-21:02
Whatever he needs, he can come and get it.

Filmosity:
21:02-21:04
The back can wait, but customers can’t wait.

Filmosity:
21:05-21:06
So they can stay here ideally.

Filmosity:
21:07-21:09
They’re a well-oiled machine, like you said,

Filmosity:
21:09-21:10
and it works for them.

Filmosity:
21:11-21:12
Ooh, Salt Bae.

Humble Roots:
21:14-21:14
Salt Bae. Hahaha

Filmosity:
21:26-21:27
What’s Kyle like as a boss?

Humble Roots:
21:28-21:29
He’s great.

Humble Roots:
21:29-21:31
I paid extra for them to say nice stuff.

Humble Roots:
21:32-21:35
He wants to get the most out of you possible.

Humble Roots:
21:36-21:37
And he will challenge you.

Humble Roots:
21:37-21:40
Like one time, I’m making meatballs in the back.

Humble Roots:
21:40-21:47
In his head he’s like, “This guy’s definitely not making meatballs fast enough.” but his way of doing it was like, let’s have a competition.

Humble Roots:
21:47-21:48
Who can make more meatballs?

Humble Roots:
21:49-21:51
And I’m like, okay.

Humble Roots:
21:51-21:54
I know I’ve been kind of not going as fast on the meatballs

Humble Roots:
21:54-21:58
and he has a way of pushing you and getting the best out of it.

Humble Roots:
21:59-22:01
And challenging you, what you got.

Filmosity:
22:01-22:02
Should I take the cups in?

Humble Roots:
22:03-22:05
You want to bust some tables for us?

Humble Roots:
22:05-22:05
Absolutely.

Humble Roots:
22:06-22:07
Here, give me that one there.

Filmosity:
22:07-22:08
Okay.

Humble Roots:
22:08-22:12
You just load it off and then there’s a bottle of quats here and you just give it a spray and a wipe after it.

Filmosity:
22:12-22:13
Sounds good.

Filmosity:
22:13-22:13
Alright.

Filmosity:
22:15-22:16
I’ve never bussed in my life.

Filmosity:
22:20-22:21
You’re really putting me to work today, man.

Filmosity:
22:22-22:23
Just kidding, I asked for it.

Filmosity:
22:25-22:26
Is that how you do it?

Filmosity:
22:26-22:27
You got it.

Filmosity:
22:28-22:28
You figure it out.

Filmosity:
22:30-22:31
Just don’t drop anything.

Filmosity:
22:33-22:34
Like, that’s your only job.

Filmosity:
22:35-22:35
Don’t drop anything?

Filmosity:
22:36-22:36
Don’t drop anything.

Filmosity:
22:43-22:44
I don’t feel confident.

Filmosity:
22:47-22:47
Okay, okay.

Filmosity:
22:54-22:54
What do you mean?

Filmosity:
22:55-22:56
I don’t feel confident.

Filmosity:
22:57-22:57
No, you gotta be.

Filmosity:
23:06-23:09
Okay, you can tell I’ve never worked in the food industry before.

Humble Roots:
23:09-23:11
You’re killing it, Andrew. You’re killing it.

Filmosity:
23:12-23:13
Am I doing it right?

Humble Roots:
23:13-23:33
Chop chop.

Filmosity:
23:13-23:33
Yes, Chef!

Filmosity:
23:13-23:33
You good?

Filmosity:
23:13-23:33
How do you balance with one hand?

Filmosity:
23:35-23:40
You should ask Sky for tips.

Filmosity:
23:35-23:40
People who work in the service industry tell me if this is right.

Filmosity:
23:40-23:41
I see you holding two at a time.

Humble Roots:
23:42-23:43
Oh, you want to do plates, hey?

Filmosity:
23:44-23:46
I don’t know, like, how you do that, man?

Humble Roots:
23:47-23:48
You got three plates, right?

Humble Roots:
23:49-23:52
So you read the bill, imagine there’s stuff on there.

Humble Roots:
23:53-23:54
Thumb, under like that.

Filmosity:
23:55-23:55
Okay.

Humble Roots:
23:55-23:55
Try that.

Filmosity:
23:56-23:56
Okay.

Humble Roots:
23:57-24:02
Then this next part, see, you kind of stick that in your thumb there.

Filmosity:
24:03-24:03
Oh.

Filmosity:
24:04-24:04
Okay.

Humble Roots:
24:04-24:05
See how you got your thumb out?

Humble Roots:
24:05-24:07
You want to kind of see if you can curl it in a bit.

Humble Roots:
24:09-24:13
Yeah. And or there you go. Try it. Don’t drop it.

Humble Roots:
24:15-24:17
Pay for it.

Filmosity:
24:15-24:17
You have to put it on your palm.

Humble Roots:
24:18-24:21
Wanna watch my technique?

Filmosity:
24:18-24:21
Oh okay.

Filmosity:
24:18-24:21
Jenn’s got a technique.

Humble Roots:
24:22-24:36
I have a whole different way to do it.

Filmosity:
24:22-24:36
Oh okay.

Humble Roots:
24:22-24:36
I do two fingers on top and I put this on my pinky.

Filmosity:
24:22-24:36
What?

Humble Roots:
24:22-24:36
So it balances this side on my arm and this side my pinky holds it up and then the food doesn’t touch.

Filmosity:
24:22-24:36
Oh wow.

Filmosity:
24:22-24:36
She’s got a strong pinky.

Filmosity:
24:36-24:40
Yeah.

Humble Roots:
24:36-24:40
Gotta work the babies man.

Humble Roots:
24:40-24:44
My pinky is a little broken. I have little mini pinkies too.

Humble Roots:
24:45-24:47
Mine’s dislocated.

Filmosity:
24:45-24:47
Like that?

Humble Roots:
24:48-24:51
Yeah and then I just balance it with my pinky and it’s not even heavy you’re just basically

Humble Roots:
24:52-24:54
preventing it from tipping this way when you walk.

Filmosity:
24:54-24:55
Then you do four at a time.

Humble Roots:
24:55-24:59
I know I had an old school waitress teach me that one year when I was younger.

Filmosity:
25:00-25:07
As the day winds down, something that’s been cooking the entire day is finally ready for us to eat.

Filmosity:
25:10-25:14
What we were doing earlier when we put it in that smoker, now it’s all ready.

Humble Roots:
25:15-25:16
Smoked hot dog brisket. Cheers.

Filmosity:
25:23-25:27
Good. Perfect. Smoked meats.

Filmosity:
25:30-25:33
Mmm. Oh, okay.

Filmosity:
25:37-25:46
It just melts.

Humble Roots:
25:37-25:46
Don’t eat that every day. It will not be good for you. Your cardiologist will be your best friend.

Filmosity:
25:37-25:46
Tyler, how long have you been an entrepreneur?

Humble Roots:
25:48-25:58
About 22 years 22 years. Yeah with 22 years of experience of being an entrepreneur Someone watching this wants to start a business. What advice would you tell them?

Humble Roots:
25:59-26:13
I would tell them if you’re starting a business or you’re looking to start a business, make sure it’s purpose-driven and it aligns not only with who you are right now, but who you plan on being in the future.

Filmosity:
25:59-26:13
How does someone find the purpose?

Humble Roots:
25:59-26:13
Good question.

Humble Roots:
26:13-26:27
There’s Many ways I guess but for me it was just doing that deep dive inwards drown out the noise declutter your mind and get down to kind of like the root of what drives you, what motivates you.

Humble Roots:
26:27-26:30
And again, how does that align with the future version of yourself?

Humble Roots:
26:30-26:35
And would you recommend, you know, finding the purpose first before starting the business?

Humble Roots:
26:36-26:38
It’s a lot easier to do it before than during.

Humble Roots:
26:39-26:43
You have a lot more time before you open a business than you have while operating it.

Humble Roots:
26:43-26:44
So yeah, I would recommend that.

Filmosity:
26:45-26:50
To end the show, I have a tradition where I ask you the question that the previous business owner wanted to ask you.

Filmosity:
26:50-26:54
And here is that question I’ll play for you right now.

Bak’d Cookies – Jessica:
26:54-26:58
I think my question would be is how do you define success for yourself?

Bak’d Cookies – Jessica:
26:58-27:05
Like what would be your moment or if it’s already happened, what was your moment of holy crap, I’ve made it.

Bak’d Cookies – Jessica:
27:05-27:06
This is success.

Filmosity:
27:08-27:08
That’s the question.

Humble Roots:
27:09-27:10
All right. That’s a good question.

Humble Roots:
27:11-27:19
The moment I have felt success, there’s been micro moments where you could sit back and you kind of look back on your journey and you go, look how far we’ve come.

Filmosity:
27:20-27:20
Yeah.

Humble Roots:
27:20-27:49
And you let it soak in for a bit. But my personality type is I don’t think i’m ever gonna allow myself to feel that full-on success, because I’m driven.

Humble Roots:
27:20-27:49
It keeps me going. But there have been moments within my team and in my business where I have kind of sat back and been proud of myself and proud of my team and seeing these original situations that would have never happened if we just didn’t take a gamble or take a risk and it’s forged many many relationships including my wife I met her at this business, standing right there.

Humble Roots:
27:50-27:51
Lifelong friendships.

Humble Roots:
27:51-27:58
That’s the type of success that I think I value more than any kind of financial or award or anything like that.

Humble Roots:
27:58-28:00
It’s the relationships I forged.

Filmosity:
28:00-28:04
And what question do you have for the next business owner on the show?

Humble Roots:
28:04-28:06
Next business owner.

Humble Roots:
28:07-28:14
What are you doing to maintain the boundaries between work and your personal life?

Humble Roots:
28:15-28:19
And I guess essentially, how are you maintaining work-life balance?

Filmosity:
28:20-28:21
There you go, that’s a good one.

Filmosity:
28:22-28:23
One last question actually.

Filmosity:
28:24-28:28
How did I do as a employee for half the day of yours?

Filmosity:
28:31-28:32
I don’t feel confident.

Humble Roots:
28:33-28:34
You killed it?

Filmosity:
28:35-28:36
Be honest.

Humble Roots:
28:37-28:43
From what I saw, your attitude, work ethic, those are the things I can’t teach.

Humble Roots:
28:44-28:46
And you had it in spades, so I appreciate it.

Filmosity:
28:46-28:47
But I couldn’t flip the…

Humble Roots:
28:48-28:49
Shed your fear of it.

Humble Roots:
28:50-28:51
You don’t cook at home, do you?

Humble Roots:
28:52-28:53
We’ll work on that.

Filmosity:
28:55-28:56
Thank you, Tyler, this was a pleasure.

Humble Roots:
28:56-28:57
Thanks, Andrew, that was fun, thanks.

Filmosity:
28:57-28:58
That was the video.

Humble Roots:
28:57-28:58
Thanks, Samson.

Filmosity:
28:58-28:59
That was the video.

Filmosity:
29:00-29:03
